Canadian Seller insuring high dollar item

I just signed up with Shipstation and have a few question I'd like clarified.

1) what is the highest dollar value that Shipsurance will cover? I'll be shipping hand made jewelry sold on Etsy with values ranging from $300 to $3000+. Does Shipsurance cover it?
2) I signed up accounts with FedEx, UPS, CanadaPost etc and they have my credit card information. If I print and buy shipping labels on ShipStation, do I get billed by ShipStation for shipping or will FedEx, UPS, CanadaPost charge my credit card/bill me?
3) FedEx and CanadaPost only cover upto $1000 for insurance. If my item is valued at $2000, how do I opt out from FedEx/CanadaPost insurance and buy it entirely through ShipSurance?

thanks.. appreciate the help
